I went to Albertson's the other evening to pick up a few things, some place I never go because although it is the closest grocery store, it can be expensive to shop there. But I was there, and Derf and I noticed that they had pork shoulders for some unearthly inexpensive price, so we bought two of them. I put one in my giant slow cooker the next day and we had sliced roast pork for supper.
The next night, Jon and I (Derf has not been eating anything solid because of his intestines) had more sliced pork. Yesterday, I used the drippings and little bits in the bottom of the slow cooker to make a pot of black-eyed peas. Jon loved them so much, he barely left me any! Today I am making pork and yellow rice. And know what? I still have enough scraps left over to make a pot of pork and lentil stew! Yeesh! (I froze the scraps, though, because I think I'm pushing it if I make the stew anytime soon.
The other shoulder is in the freezer and it's going to stay there a good long while. I'm all pigged out.
